Two casks have been bottled for Denmark from Lindores Abbey Whisky

Mac Y A/S is the importer of Lindores Abbey and the two casks, one of which is aged in a used sherry cask, yielded 790 bottles and has an incredibly beautiful color and exceptional taste. The other barrel is aged in a used bourbon barrel and yielded 220 bottles. Both variants are bottled at full cask strength, neither chill filtered nor any caramel added.

Lindores Abbey The Exclusive Sherry Cask: This release consists exclusively of the whisky that has been in sherry casks. The release is a special bottling made for Mac Y, and therefore has a different alcoholic strength (and therefore flavor) than the regular limited edition . You can compare it to the standard release to see how much of an impact the cask can have on the taste and color - even after just a few years of aging!

The ABV of the bottle is 52.6%, which is higher than the regular limited edition, which is 49.4%. It's also a great way to compare the flavors of the two bottles.

About Lindores Abbey The distillery:

In the Scottish Finance Archive from June 1494, the earliest known reference to what is now known as Scotch Whisky can be found. The piece of text is about a shipment of malted barley to a monk from Lindores Abbey in Scotland.

"To Brother John Cor, 8 sacks of malted barley to make Aqua Vitae for King James IV"

This quote cements Lindores Abbey as the spiritual home of Scotch Whisky. It's a legacy that Lindores Abbey Distillery still carries with it today, more than 500 years later.

While Lindores may be rich in tradition, the distillery is young and its methods are cutting-edge and innovative - experimenting with new fermentation times, specially designed boiler systems and blending across cask types.

Lindores uses selected bourbon, sherry, and vinfade to mature their whisky. Lindores Lowland Single Malt Scotch Whisky is their standard release, which contains a blend of the three cask types. Each year, there are also limited releases of the casks separately.

Lindores has one of the longest fermentation periods in the whisky world - 117 hours. This - along with an unusual distillation process - results in a single malt that, despite its young age, has a truly remarkable character.

Lindores uses a specialized distillation system - after the whisky is first distilled in a massive wash still called "Dodo", it is transferred to two sister stills named after the owners' daughters Puppy and Gee. The fact that the whisky is distilled in two smaller stills - rather than one large one - means that there is twice as much contact with the copper inside of the still. This amplifies and refines the wonderful flavors that develop during the extraordinarily long fermentation period.

The somewhat unique and very beautiful bottle design is inspired by the decoration on the bricks found during the excavation of the old Lindores Monastery.
