The highlands around Jalisco lie red and dry under the sun. The agaves stand in long rows and wait seven or eight years before the jimador arrives with his coa and strips the leaves away. What is left is the piña — the heart that becomes tequila.
Expert description
LALA Reposado Tequila is a Reposado Tequila made from 100% blue agave grown in Jalisco, Mexico, rested for four months in new oak casks and bottled at 40%.
Behind the bottle are two Dutch friends, Ambre and Iris. They fell for tequila at a bar in Brooklyn, came home to Amsterdam and found that this kind of tequila simply wasn't there. So they made it themselves. LALA became Amsterdam's first tequila brand, and the name comes from the feminine article "la" — twice over, for two women. Production runs in small batches at an award-winning distillery in Jalisco.
The agave is baked for more than nine hours until the piña is soft and the sugars come free easily. The juice ferments naturally for roughly 72 hours and is then double distilled. Four months in new oak casks follow, and that is where the colour and the rounder tone come from: fresh wood gives up vanilla, caramel and a gently spiced oak character quickly, without drowning the agave.
Tasting notes
Nose
Cooked agave first, sweet and faintly earthy. Baked apple and vanilla on top, with a little anise and cut grass sitting behind.
Palate
Soft and semi-sweet in the mouth. Caramel and vanilla from the new wood, the agave still clear through the middle, and a touch of citrus towards the end.
Finish
Medium and warm. Herbs and lightly smoky oak that linger without biting.
