    Red earth, dry hills and agave planted in rows that run all the way to the horizon. Jalisco has been making tequila for generations, and this is where LALA gets theirs.
    The story actually starts in a Brooklyn bar, though, where two Dutch friends tasted something they couldn't buy back home in Amsterdam.

    LALA Blanco Tequila is a Blanco Tequila from Jalisco in Mexico, made with 100% Blue Weber Agave, unaged and bottled at 38%.

    Ambre and Iris came home from the USA with the memories but not the bottles. So they built Amsterdam's first tequila brand themselves, and it became the city's first female-owned one at the same time. The name comes from the feminine article la found across a number of languages, and with two women behind the brand it turned into LALA. Bottles are filled and labelled by hand, one at a time, on a production line staffed entirely by women.

    The spirit itself comes from an award-winning distillery in the heart of the tequila region in Jalisco, working in small batches. The agave is baked for more than nine hours until the piña is soft enough to give up its sugar when crushed. The juice ferments with yeast for around 72 hours and is then double distilled. No cask, no detour — the Blanco goes straight into the bottle, which is exactly why the agave comes through so clearly.

    Tasting notes

    Nose

    Ripe agave straight away, with something behind it that reads as olive oil. Green apple, a thread of aniseed and the smell of freshly cut grass.

    Palate

    Semi-sweet, with more body than you expect at 38%. Agave holds the centre while citrus and lime spread out to the edges. A green peppercorn note arrives late.

    Finish

    Clean and refreshing. The herbal side hangs on, and there is a gentle peppery warmth that stays a while.

    What does LALA Blanco Tequila taste like?

    Ripe agave, green apple and citrus with herbal notes of aniseed and freshly cut grass. Because it has never seen a cask, there is no vanilla or caramel covering the agave, and that is the whole point. A green peppercorn note and a gentle peppery warmth close it out.

    Is LALA Blanco Tequila made with 100% agave?

    Yes, it is made with 100% Blue Weber Agave and nothing else. That means no other sugars were added during fermentation, which is permitted in the cheaper mixto tequilas. The agave is baked for more than nine hours and fermented for around 72 hours before being distilled twice.

    What is the best way to drink LALA Blanco Tequila?

    Neat at room temperature if you want the agave at its clearest. Over ice it tightens up and turns more refreshing, and in a Margarita or Paloma it has enough body not to disappear behind lime and salt. Try 45 ml tequila, 30 ml fresh lime, 20 ml triple sec and 10 ml simple syrup shaken with ice.

    What is the difference between LALA Blanco and LALA Reposado?

    Blanco goes straight into the bottle with no cask maturation, while LALA Reposado Tequila has rested in new oak casks. Blanco is the fresh, green one of the pair, where Reposado turns rounder and picks up colour and a little vanilla from the oak. If you want to learn what agave tastes like, start with the Blanco.

    Which glass suits a Blanco Tequila?

    A small tulip-shaped glass, such as a sherry glass or a dedicated tequila glass. The narrow opening gathers the agave aromas, whereas a shot glass mostly sends alcohol up your nose. If it is going into cocktails, the glass matters far less than the ice.

    What food goes with LALA Blanco Tequila?

    Grilled food, spicy dishes and salty snacks. The citrus and pepper notes cut through fat and chilli, which is why it works with tacos, grilled pork and ceviche. It is also a fine alternative to white wine alongside a plate of oysters.
