Some Cognacs simply need to be left alone. Gautier XO is the house's flagship, a blend of old eaux-de-vie that has drawn colour and finesse from the oak year after year until the result is dark, round and almost without a rough edge left.
Expert's Description
Gautier XO French Cognac is a Cognac, a blend of older eaux-de-vie from Grande Champagne and Petite Champagne, bottled at 40%.
The house of Gautier, founded in 1755 in the old watermill on the river Osme, pours everything its generations of coopering and ageing craft can offer into XO. The XO designation requires at least six and a half years in cask for the youngest Cognac in the blend, but Gautier's XO draws on eaux-de-vie that are often far older.
The long ageing gives the Cognac its deep, amber-dark colour and a finesse that builds layer upon layer, rounder than VSOP, more complex on the finish, and with a clear, mature richness.
Gautier XO has won gold at the International Spirits Challenge and has been singled out among the world's best Cognacs, recognition of the house's commitment to long cask ageing over quick solutions.
