    Three friends with a shared obsession for gin settled into an old timber yard in the Yarra Valley in 2013. They wanted to prove Australia had something new to say about gin, and won the world's best gin title two years running to prove it.

    Four Pillars Rare Dry Gin is an Australian Dry Gin distilled in Healesville in the Yarra Valley and bottled at 41.8%.

    The distillery was founded by Stuart Gregor, Cameron Mackenzie and Matt Jones, who in 2015 moved production into a former timber yard in Healesville, right in the heart of the Yarra Valley wine region.

    Botanicals such as coriander, juniper, cardamom, star anise, lemon myrtle, Tasmanian mountain pepper, lavender, cinnamon and angelica are joined by whole, organic oranges, not dried peel, because Australian citrus is unusually aromatic in its fresh form.

    Cardamom, cinnamon and star anise add a warm, fruitcake-like depth, while Tasmanian pepperberry brings heat without harshness, and lemon myrtle serves as a native Australian alternative to lemon peel.

    The nose is warm and spiced with cardamom and cinnamon, lifted by a fresh, aromatic orange note.

    Palate

    The palate is full-bodied with juniper and spice up front, backed by the freshness of lemon myrtle and a light peppery warmth.

    Finish

    The finish is long and spiced, with a last trace of star anise and orange.
