The process starts with 5-year-old Guyana-Barbados rum arriving in Jerez, where it is placed in 20-year-old Dos Cartados casks. After three years, the Dos Maderas 5+3 rum is ready to drink. Some of this 5+3 rum is now filled into 20-year-old Don Guido PX casks, and after another 2 years the Dos Maderas 5+5 rum is finished (the big bottle). The idea is to first taste the raw rum sample. Then the dry sherry, to get an idea of what will happen to the rum. Now the Dos Maderas 5+3 rum is tasted, where the clear traces of the dry sherry should be noticeable.
