Chocolate fondant with Mezclado Dark C - Food with Alcohol by Jan Ohrt

Chocolate Fondant with Mezclado Dark C, serves 6.

  • 100 g butter
  • 100 g dark chocolate, finely chopped
  • 3 eggs
  • 70 g sugar
  • 40 g all-purpose flour
  • 25 g butter (for greasing the molds)
  • 3 cl Mezclado Dark C
  • Good-quality cocoa for dusting

Instructions:

  1. Melt butter over low heat in a saucepan, remove from heat, and stir in the chopped chocolate. Stir until it's completely smooth, and the chocolate is melted.
  2. Whisk together eggs and sugar until airy and the sugar is dissolved. Mix in the chocolate-butter mixture and finally sift in the flour. Gently fold until the batter is uniform.
  3. Grease 5 cm diameter cake rings with butter, place the rings on an ovenproof dish lined with parchment paper, and distribute the batter into the rings. Place the chocolate fondants in the freezer for at least 3 hours. They can be stored in the freezer for about 1 month.
  4. When ready to serve, remove the frozen fondants from the freezer and place them in a preheated oven at 180 degrees Celsius (fan-assisted) for 16-18 minutes.
Release the warm chocolate fondants from the cake rings, pour 1/2 cl Mezclado Dark C over each of them, sprinkle with a bit of high-quality cocoa, and serve immediately, preferably with your favorite ice cream and/or fruit compote.

About Mezclado Dark C:
Mezclado is Spanish and means mixture. Rum is a forgiving spirit, welcoming almost any kind of addition both before and after aging. Personally, I've encountered good rum that has actually improved a bit after the addition of everything from coffee, chocolate, coconut, and even pineapple. Especially in Central America and the Caribbean, this technique is frequently used because they have so much to offer.

However, one shouldn't think that you can just pour anything in. Both dosing and method are extremely delicate, and the result can quickly be disappointing if you don't know what you're doing. This can easily result in a waste of both good time and good rum.

Mezclado began its adventure in the back room of a small wine shop in Middelfart and quickly became a success. People came from far away to buy the successful blends, and soon the project grew beyond the back room to Løsning outside Vejle. Today, they have a widely branched distribution network, and you can buy the delicate blends almost anywhere in the country.

Mezclado Dark C is a fine example of how such a blend can succeed when done with expertise and care. The rum is infused with the best dark chocolate in small intervals and has been aged to perfection.

The first thing that hits your nose is the scent of good rum, and that's a good thing. Fine notes of chocolate with hints of coffee, barrel aging, and cardamom sit well on the tongue, while the aftertaste is long, sweet, and intense. Enjoy it neat, with a lump of ice, or use it as a delightful ingredient the next time you make dessert.


About the cookbook: Mad med promiller
Over the spring, the two owners of the largest liquor store in the Nordic region, Ulrik Bertelsen and Henrik Olsen, have been working to realize a long-standing dream. With the help of a good friend of the house, Jan Ohrt, the book Mad med Promiller #1 is now a reality and it was presented on Saturday, August 5, 2023 at an informal premiere in the more than 400m2 store at Vejstruprødvej 15 in Sjølund.
