Nyborg Destilleri launches new whisky trilogy
Whisky lovers will be able to follow the development of a whisky from the same cask over a period of three years. The new organic whisky has been aged in an old Oloroso sherry cask and is named "Barely Legal", and only 227 bottles have been bottled, at DKK 795 per bottle (70cl / 53.8% abv).

"Barely Legal" is part of Nyborg Distillery's Adventurous Spirit series, which has also featured the gold medal-winning "The Lost Pilgrim" and the fiery "Rocket Man", which had a strength of 68.6% and was only bottled in 19 bottles. Barely Legal is the first of three bottlings in the Iberian Beauty trilogy. The whisky is just three years old - hence the name - but you certainly can't taste it with its intense cask notes and sweetness of coconut and vanilla bean. Barely Legal was quickly matured in two Portuguese STR vinfade, then finished in an old 1st fill Oloroso sherry cask.

The STR casks that Nyborg Destilleri used for Barely Legal have rounded the whisky, giving it greater complexity and extra color. The finish of the Oloroso sherry cask has added additional sweetness and made the whisky a little more vinous. Nyborg Destilleri are proud to have created a complex, mature and harmonious single malt whisky in such a short time.

This bottling is the first of three in the Iberian Beauty trilogy. Here, whisky lovers will be able to follow how a whisky develops over time in the same cask. Nyborg Destilleri Iberian Beauty will make three bottlings from the same old Oloroso sherry cask, each one year apart. In December 2019, the first in the trilogy - 'Barely Legal' - will be bottled and sold. The next whisky will be released in December 2020 and the last will be bottled in December 2021. Bottles will be shipped from the distillery on Monday, December 16 to both private and retail customers
